Nettle Soup

Ingredients: 1 medium onion, 2 medium potatoes, a little oil, about 100 nettle tops, 2 pints water, handful of rolled oats, stock cube, cream
Equipment: Saucepan, wooden spoon, hand blender

  
The Potions Club Safety Check
Use wild harvest ingredients only when:
  • at least 2 people are absolutely sure the plant is safe to use
  • there is plenty of the plant growing
  • you have the landowner's permission
Chop the onions and potatoes into small pieces. Put them in a saucepan with the oil, and fry them until they're golden brown and soft.
   
Nettle soup recipe    

Take the pan off the heat for this next bit. Crumble the stock cube into the pan. Add the oats and stir well. Add the nettles and stir again. Pour in the water, making sure there's enough to cover the nettles. You can put the pan back on the heat now. Bring the mixture to the boil, and then simmer it for about 20 minutes. Take the pan off the heat, then use the hand blender to liquidise the soup until it's smooth. If you like you can decorate the soup with a swirl of cream.
