Elderflower Fritters

Ingredients: 2 eggs, 8oz flour, pinch of baking powder, 1 pint milk, elderflower heads, oil
Equipment: bowl, frying pan, whisk, fish slice, kitchen roll

Use wild harvest ingredients only when:
  • at least 2 people are absolutely sure the plant is safe to use
  • there is plenty of the plant growing
  • you have the landowner's permission
Put the eggs in the bowl and beat them with the whisk. Add the flour and the milk bit by bit, whisking well as you add them. The idea is to keep the batter as lump-free as possible.
   
Elderflower Fritters recipe    

When you think the batter seems smooth enough, it's time to put some oil in the frying pan. About 1/2 inch deep
Fresh Elderflowers
should do. Heat it up and meanwhile, dip an entire elderflower head into the batter. Put as many battered elderflowers as you can fit into the pan. After a few minutes of frying turn the fritters over using the fish slice. When the fritters are golden brown on both sides, they're ready to be lifted out of the frying pan with the fish slice. Put them on a piece of kitchen roll to mop up the oil. These fritters are especially tasty with rose hip syrup or rose petal syrup.
